Tibetan Chicken Shapta Recipe


         Tibetan food tends to reflect it's hilly landscapes. Contrary to popular belief, Tibetan food is not entirely vegetarian. There is a plethora of meat dishes that the locals prepare and enjoy. Dishes like Thenthuk, Ema Datshi and Momos are quite popular outside Tibet but there are some dishes like Shapta and Kaalo Daal Maasu that you will get to enjoy only at a Tibetan's home.

INGREDIENTS:
  • 700 gms boneless Chicken, diced into squares
  • 1 Egg White
  • 1 tbsp Rice Flour
  • 1 tbsp Corn Flour
  • 20 gms Soya Sauce
  • 20 gms Black Bean Sauce
  • 15 gms Brown Sugar
  • 7 gms Rice Wine Vinegar
  • 1 stalk Celery, finely chopped
  • 2 medium Onions, separate the layers
  • 350 gms Choice of veggies (Broccoli, Bell Peppers, Carrots, Mushrooms, etc.)

METHOD:
1. Marinate chicken pieces with corn flour, rice flour, one egg white, salt and pepper. Set aside for at least 10-15 minutes. Deep fry them till golden-brown.
2. Heat oil in a pan. Add garlic, onions, celery to the oil, fried chicken pieces and then your choice of veggies.
3. Side by side, make a gravy out of soya sauce, black bean sauce, sugar and corn flour. Pour this on the veggies and adjust the water by the end of it.
4. Garnish with celery and serve hot.
