Jini Dosa Mumbai Food Dosa/Roll Dosa/ Ginni Recipe
A fusion recipe among popular South Indian cuisine with popular street food from Mumbai. An ideal evening snack recipe that can be easily extended to a late dinner or perhaps even a morning breakfast recipe. This is an extended version of the Masala Dosa recipe with stuffing of cheese, sauces and spices.
South Indian cuisine offers innumerable variations for dosa dishes ranging from thick to thin and with stuffing. But due to the metropolitan lifestyle, it has evolved into a category of street food with fusion to other cuisines. Jani Dosa is a fusion dosa recipe that resembles the street food palette of Mumbai.
Some important tips when preparing Cheesy Jeanie Dosa recipe First of all, dosa batter is very important for this recipe and you cannot use all dosa batter. I recommend using Masala Dosa Batter, which produces crisp and can be diluted.
Secondly, do not overstuff the dosa and keep it simple with minimal stuffing. Also make sure that the stuffing is filled with water and not dry. Basically, it helps retain moisture within the dosa and does not burn. Finally, if you are finding it difficult to roll the dosa with stuffing, discard the cheese and add it after rolling. Also it is not compulsory to add cheese and it can be skipped altogether.

Ingrediant:
½ cup dosa batter
1 tsp butter
2 tablespoons onion , finely chopped
2 tbsp cauliflower , finely chopped
2 tbsp capsicum , finely chopped
½ t spooned sausage sauce
2 tsp tomato sauce
4 tsp pav bhaji masala
Pinch of salt
2 tbsp Mojherela cheese / cheddar cheese , was the Great
2 tablespoons green onion , chopped
Method:
1.First, pour a ladle of dosa batter on the hot tawa and spread it gently.
2.Boil for a minute, let the dosa cook.
3.Now keep the flame on a low flame and rub the butter evenly.
4.Next add 2 tablespoons of onion, 2 tablespoons of cabbage and 2 tablespoons of capsicum.
5.Also add ½ teaspoon shezwan sauce, 2 teaspoon tomato sauce, ¼ teaspoon pav bhaji masala, 1 teaspoon butter and a pinch of salt.
6.Mix well and spread the stuffing all over.
7.Using a pizza cutter or knife, cut the dosa into thin strips.
8.Also make 2 tablespoons mozzarella cheese / cheddar cheese equally great.
9.Cook until the dosa becomes crisp and the cheese melts completely.
10.Scrape the dosa strips and roll them tightly.
11.Finally, serve the ginni dosa with more cheese and green onions.
