                        North Indian Verkee Whole Recipe



    It is a crunchy and flaky recipe made from maida, black pepper and cumin seeds. This recipe is specially made on the occasion of Diwali and Ganapati Chaturthi. It is a very popular jar snack and can also be made for daily tea or coffee.

    The chirouti is sweet in taste, while the veraki is spicy. By adding black pepper, cumin and salt to it, it makes a crisp snack or else its texture

How to make crispy verky puri :

     Now I would like to give some tips and advice to make a good flaky and crunchy veraki whole recipe . Use only refined flour for this recipe, do not use wheat flour or any other flour. Verki puri is quite famous for its crust and crunchiness, which comes only from maida. I applied 7 layers of rolled loaves to make it flaky. You can increase and decrease its number as you wish. Lastly, I would like to say that the flour should be very hard, which may have some difficulty in rolling but it is necessary to get good texture. Do not put them together while deep frying, otherwise it will not cook evenly.

MATERIAL:

TO KNEAD REFINED FLOUR:
1½ cups maida 
1 tsp cumin seeds
1 tsp black pepper , crushed
½ tsp celery
4 tsp salt
2 tbsp ghee , hot
½ cup water
1 T spoon oil , to lubricate

OTHER STUFF:

Ghee , to create a layer
Flour , for making crust
Oil , for frying

INSTRUCTION:

1.First of all, take 1½ cups maida, 1 tsp cumin, 1 tsp black pepper, ½ tsp celery and और tsp salt in a large bowl.

2.Now mix it well.

3.Now put 2 tablespoons of hot ghee on top of the flour.

4.Now mix it well and see if it stays in the same shape after pressing it in the hand.

5.Now add ½ cup of water to it and start kneading.

6.In this, knead smooth and tight all purpose flour as per requirement.

7.After this, apply oil on it and keep it aside for 15 minutes.

8.Now knead this fine flour again and cut into 7 equal balls.

9.Now apply flour on these balls and roll them thin.

10.Roll them out as thin as possible.

11.Apply ghee with a brush and sprinkle all purpose flour.
Similarly, now put another puri on it.

12.Make 7 layers by applying similar layer, applying ghee and sprinkling all purpose flour.

13.Now roll it tightly and take care that its layers do not move from their place.

14.Now cut them into thickness of 1 inch or according to your wish.

15.Now roll them lightly.

16.Now deep fry them in hot oil on low heat.

17.From time to time, stir it evenly on a low flame.

18.Fry them for 20 to 25 minutes or until golden and crisp.

19.Now take them out on the kitchen paper so that the paper absorbs the oil.

Now you can enjoy the prepared verki puri and keep it safe in an airtight container for a month.
