                     Rice Dumplings (Mangalorean Pundi)


     A traditional breakfast recipe of South Canara cuisine made with idli rava. It is one of the healthy dishes of Udupi and Mangalore region specially made for morning breakfast. It is usually served with coconut chutney but tastes great when served with a choice of spicy chutney or pickle.

    Udupi or Mangalore dishes are known for their healthy steamed breakfast dishes. Most of the rice in these dishes is used as its base and thus supplies essential carbohydrates. One such rice based recipe is one made with idli rava and boiled pundi recipe or rice dumplings in an idli stand.


   Pundi was grinded soaked rice roughly and given to it to steam. This is a time consuming recipe, but these days this recipe is made with idli rava to shorten the soaking and grounding process. I like the former way of making this recipe from the beginning, but in this recipe post I have shown the short cut method. My guess is that most of my readers would prefer some quick and healthy breakfast recipes for the morning and have therefore used Idli Rava.

   First of all, if you like making these dumplings using rice, then you need to soak it and make a thick paste. Also, when the rice becomes a thick paste, you have to cook it on a low flame continuously until it starts leaving the pan. The whole step is skipped along with idli rava. Secondly, if you have concerns about rice rava, you can also make it using Bombay rava or upma rava ( rava pundi). Finally, serve these dumplings with a choice of chutney or any coconut-based curry. For meat eaters, you can serve it with kori gassi or any spicy coconut based meat curry.


MATERIAL:

3 tsp oil
1 tsp mustard
1 tsp urad dal
4 tsp fenugreek
2 dried red chillies , broken
Some curry leaves
1 cup idli rava / rice rava
½ cup coconut , was Great
1 tsp salt
3 cups of water , boiling

INSTRUCTION:

1.First, sprinkle 3 tsp oil and 1 tsp mustard, 1 tsp urad dal, ¼ tsp fenugreek, 2 dry red chillies and some curry leaves in a pan.

2.Now add 1 cup idli rava and roast on medium heat.

3.Roast for 5 minutes or until the rava becomes aromatic.

4.Add ½ cup coconut, 1 tsp salt and mix.Also, put 3 cups of boiling water while keeping the flame on medium.

5.Stir continuously, making sure no lumps are formed Stir until the mixture thickens and ensure that no lumps are formed.

6.Cook until the mixture begins to separate and shape the pan.Cool the mixture slightly.

7.When the mixture is hot then wet your hands and start preparing the balls.

8.Make a small hole by gently pressing it with your thumb.
Place the prepared packet in the steamer. Be sure to lubricate the steamer plate to prevent it from sticking.

9.Cover and steam for 15 minutes, or until the pundi is fully cooked.

10.Finally, serve Pundi / Undi with Spicy Garlic Sauce.
