Aloo Paneer Tikki Recipe | Paneer Potato Cutlet 


       An easy, healthy and tasty north indian snack or tikki recipe made with grated paneer and boiled potatoes. the recipe is typically made by street vendors and served as chaat recipe with a choice of sauce like ragda or imli sauce, but can be served as it is without any sides. the recipe is very similar to the popular aloo tikki which is just made with potatoes, but this recipe contains paneer stuffed within potato tikki.

    Tikki is a popular snack from the north india and western indian cuisine and is served with wide range of sauces. typically it is made with just one hero ingredient and the most common is aloo or potatoes. but there are other fusion recipes which can be made mixing 2 hero ingredients and aloo paneer tikki recipe is one such fusion recipe.

     As I mentioned earlier tikki recipes are generally made and served as street food snack. typically it is eaten with chaat recipes sauces like ragda, tamarind or green chutney but it can also be served as patties in between bread slices. I personally like it as patties in between burger slices or any sandwich slices. the main reason being it is so filling due to the use of potatoes and paneer in it. having said that in this paneer potato cutlet i have made a potato-based covering and stuffed the paneer masala grate inside it. well, you can attempt to have both mixed together and shape it like tikki. but due to the excess moisture within the paneer, you may not shape to the required one. 

TIPS,SUGGESTION AND VARIATION:

    Firstly, the moisture factor holds good for the boiled potatoes and not just for paneer. hence once the potatoes are boiled or pressure cooked, peel it and keep it aside.

   Secondly, in this recipe, i have shallow fried with less oil for the healthy option. having said that you can also pan fry and also deep fry it for more crisp option.

   Lastly, you can experiment the recipe by adding other boiled veggies with potato. you can add veggies like peas, carrot and beans to begin with.


INGREDIENTS:

FOR ALOO MIXTURE:
  • 2 potato / aloo, boiled & mashed
  • 1 chilli, finely chopped
  • ½ tsp ginger garlic paste
  • 2 tbsp coriander, finely chopped
  • ¼ cup cornflour
  • ½ tsp salt

FOR PANEER STUFFING:
  • 1¼ cup paneer / cottage cheese, grated
  • ½ tsp ginger garlic paste
  • ½ tsp kashmiri red chilli powder
  • ¼ tsp cumin powder
  • ½ tsp chaat masala
  • 2 tbsp coriander, finely chopped
  • 2 tbsp mint / pudina, finely chopped
  • ¼ tsp salt


OTHER INGREDIENTS:
  • oil, for roasting


INSTRUCTIONS:

1.Firstly, in a large bowl take 2 potato boiled & mashed potato.
2.Add 1 chilli, ½ tsp ginger garlic paste, 2 tbsp coriander, ¼ cup cornflour and ½ tsp salt.
3.Mix well making sure everything is well combined.
4.Now in another bowl take 1¼ cup paneer.
5.Add ½ tsp ginger garlic paste, ½ tsp chilli powder, ¼ tsp cumin powder, ½ tsp chaat masala.
6.Also, add 2 tbsp coriander, 2 tbsp mint and ¼ tsp salt.
7.Mix well making sure everything is well combined. paneer stuffing is ready.
8.Grease your hand with oil and pinch a ball sized aloo mixture.
9.Flatten slightly making sure there is enough space.
10.Now place a small ball sized prepared paneer stuffing in the centre.
11.Wrap and seal the stuffing well.
12.Now flatten slightly forming tikki.
13.Heat oil in a pan and shallow fry on medium flame.
14.Flip over once the base turns golden brown.
15.Fry both sides until it turns golden brown and crisp.
16.Finally, enjoy aloo paneer tikki with tomato sauce and green chutney.

TIPS,SUGGESTION AND VARIATION:
  • Firstly, make sure to prepare spicy stuffing as it gives a nice bite.
  • Also, you can pan fry or deep fry the tikki until it turns crispy and golden.
  • Additionally, adding cornflour helps to make tikki crispy.
  • Finally, aloo paneer tikki recipe tastes great when served hot.
