                           Chicken Ghee Roast Recipe

    Originating from a small town named Kundapur in Karnataka, Chicken Ghee Roast is a staple in almost every Mangalorean home. It calls for a  generous quantity of ghee and spices that gives the dish its iconic fiery and tangy flavour.

Ingrediant:

1 kg Chicken Pieces, clean and washed
1 tbsp Coriander
1 tbsp Cumin Seeds (Jeera Seeds)
7-8 Kashmiri Red Chillies
6 cloves Garlic
3 tbsp Ghee (Clarified Butter)
Salt as required
Water as required


Method:

1.Roast coriander, cumin seeds, Kashmiri red chillies and garlic. Grind them with a little water to make a fine paste.

2.Apply this paste to cleaned and washed chicken pieces along with salt to taste and keep aside for 30 minutes or more.

3.Heat ghee in a heavy-bottomed pan. Add the marinated chicken pieces and sauté for a minute. Cover and let it cook till done.
