Cocon Milk Pulao Recipe | Coconut Rice Pulao
An interesting and flavoured pulao recipe made with long grain rice and coconut milk. it is an ideal lunch box or tiffin box recipe which can be swiftly made during the early morning busy hours. as such it does not need any particular side as it does contain all the flavour, but tastes amazing when served with raita.
Rice based pulao are very common across india and it is one of the most sought dish. perhaps due to the simplicity of these dishes and also the fact that these are one pot meal. one such easy and popular south indian alternative is the coconut milk pulao recipe known for its flavour and taste.
TIPS,SUGGESTION AND VARIATION:
Firstly, the recipe tastes good when it is made with basmati rice or any long grained rice. having said that you can also make it with sona masuri, but do not make it mushy or over cooked.
Secondly, i have made this recipe as one pot one meal in a pressure cooker. well it is much easier this way, but not necessarily you have to follow this way. you can also use pre cooked rice and mix it with same masala. lastly, the recipe tastes itself without any sides but tastes great with biryani gravy or a simple raita.
INGREDIENTS:
- 2 tbsp oil
- 1 tsp cumin / jeera
- 2 pods cardamom
- 1 inch cinnamon stick
- 4 cloves
- ½ tsp fennel / saunf
- 1 bay leaf
- 12 cashew / kaju
- 1 onion, sliced
- 1 tsp ginger garlic paste
- 1 carrot, finely chopped
- 5 beans, finely chopped
- 2 tbsp peas / matar
- 2 cup coconut milk
- 1 cup basmati rice, soaked 20 minutes
- ½ tsp salt
- 2 tbsp coriander, finely chopped
INSTRUCTIONS:
1.Firstly, in a cooker heat 2 tbsp oil and saute 1 tsp cumin, 2 pods cardamom, 1 inch cinnamon stick, 4 cloves, ½ tsp fennel and 1 bay leaf.
2.Add 12 cashews and roast to golden brown.
3.Further add 1 onion, 1 tsp ginger garlic paste and saute until raw aroma disappears.
4.Additionally, add 1 carrot, 5 beans and 2 tbsp peas.
5.Saute for a minute without overcooking veggies.
6.Now add 2 cup coconut milk and mix well.
7.Further, add 1 cup basmati rice and ½ tsp salt.
8.Cover and pressure cook for 2 whistles on medium flame.
9.Now add 2 tbsp coriander leaves and mix well.
10.Finally, enjoy coconut milk pulao with biryani gravy.
