Dosa With Chow Mein Noodle Stuffing| How to make Schezwan Dosa at Home
'Dosa' and ' Chowmein' are two very popular street food dishes in India. The Schezwan Dosa is a famous Mumbai street food combining the Indo Chinese flavours. Spicy Schezwan Sauce is spread on top of the South Indian rice and lentil crepes aka Dosa and stuffed with Chow mein/Stir fry noodles. A tasty recipe that is so refreshing and appealing to the younger generation. The best part of the recipe is the use of plenty of vegetables and home made schezwan sauce without any preservatives. A fusion treat for spice lovers.
Ingredients :
- 3 cups dosa batter
- 1/4 teaspoon sugar
- 1 teaspoon gram flour/besan
For greasing the dosa:
- 2 teaspoons sesame oil
- 1 teaspoon ghee/butter
For schezwan paste/chutney :
- 6 dry red chillies ( kashmiri red chillies gives a good natural colour)
- 5 garlic pods
- 1 large onion( halved)
- 2 large ripe tomatoes
- 1 tablespoon sesame oil
- 1/2 teaspoon white pepper powder ( optional)
- 1/4 teaspoon sugar
- salt to taste
For the Chow mein :
- 150 gms noodles ( you can use whole wheat noodles as healthier option)
- 2 garlic pods ( grated)
- 1/2 " ginger(peeled and grated)
- 1 onion ( sliced thinly length wise)
- 1 carrot ( finely chopped or shredded)
- 1/4 cabbage ( shredded )
- 1 capsicum/bell pepper (finely chopped or shredded)
- 2 green chillies (finely chopped)
- 1/2 teaspoon light soya sauce
- 1 teaspoon tomato ketchup ( optional)
- 3-4 black peppercorns ( freshly powdered)
- 1 tablespoon sesame oil
- salt to taste
For Garnish :
- Finely chopped spring onion greens OR cilantro
Method :
To make schezwan dosa batter:
1. In a bowl, add the dosa batter, sugar and the gram flour/besan.
2. Mix the batter in a circular motion for 3-4 minutes so that they mix well without any lumps.
3. Let the batter rest for 15 minute
To make the schezwan sauce:
1. Boil 1 cup of water and add the tomatoes, onion, red chillies and garlic pod.
2. Switch off and let it soak for 15 minutes.
3. Remove the soaked ingredients and grind it to a smooth paste.
4. Heat a medium size pan with sesame oil and add the ground mixture.
5. Add sugar and salt and over low flame let the mixture cook till the oil separates.
Note: Cover and cook the schezwan sauce as it will splutter.
Your sauce is ready.
To make the chow mein :
1. In a large pan/vessel, heat 6-7 cups of water with 1/2 teaspoon salt .
2. Add noodles to the boiling water and cook uncovered on medium flame for 2-3 minutes only.
3. Drain the excess water and wash the noodles with cold water.
4. Apply 1 teaspoon sesame oil on the noodles and set them aside.
5. Heat a wide pan with 2 teaspoons of sesame oil.
6. Add the grated ginger , garlic and chopped green chillies.
7. Mix well and add the sliced onions and stir fry on high heat, stirring continuously.
8. Once the onions turn translucent add other shredded vegetables one by one stirring continuously.
9. Add salt and pepper.
10. Add the boiled noodles, soya sauce and tomato ketchup.
11. Stir fry for one minute and switch off.
Your chow mein is ready.
How to make schezwan dosa:
1. Heat a dosa tawa/skillet over low flame.
2. Apply a uniform coat of sesame oil using a muslin cloth or silicon brush.
3. Pour a ladle full of batter and using circular motion, spread the batter to shape the dosa.
4. Spread oil + ghee mixture across the dosa and on the sides.
5. When the dosa is half cooked, spread the schezwan sauce using a spatula .
6. Once the dosa is cooked on the top, place a ladle full of noodles on one end of the dosa, fold over and transfer it to a serving plate.
7. You can cut them into smaller portions and serve along with your choice of chutneys or tomato ketchup.
Notes:
1. Lightly grease tawa after making each dosa.
2. Temperature of the tawa is important while making dosa. If the tawa is too hot, sprinkle some water and then spread oil.
3. You can also use normal dosa batter without the sugar and gram flour.
4. Add your choice of vegetables to make the noodles.
5. While making the noodles, stir fry the vegetables for a shorter period to retain it's colour and crunchiness.
6. Making the dosa in an iron skillet gives the dosas perfect colour and texture.
7. Adjust spice levels according to taste.
8. Adding ghee to the dosa adds taste. You can use only oil also.
