  The confluence of varied cultural influences in the Assam Valley has led to the staggering variety and flavors in the Assamese food. Assam has a verity of vegetables and incredible plants that taste the best as well as medicinal benefits.

  The cuisine is characterized by very little use of spices, but Ginger, garlic, Onion, green Coriander widely use in all dishes. Fermentation of vivid vegetable & fish, meat also consume.  The preferred oil for cooking is the pure mustard oil.

  Meat & fish dishes are also a delicacy In Assam. Variety fish, Matton, Chicken, Pigeon, Pork, Duck among them. The great Visnavite saint Srimanta Sankaradeva belongs from this land and teaches Sanatana Dharma in Assam. So, someone being a Sanatana Dharma follower avoids non-vegetarian food but consume all vegetables as well as the recipes like any other ethnolinguistic people of Assam.

Pork: 
  Pork meat can be cook with the verity of recipe-style. With leafy vegetables, Spice, wine, grass... and many more! Pork is suitable for cholesterol-lowering or healthy heart diets. This meat is a good source of mineral, phosphorus,  sodium, Zinc, potassium & copper, pork meat is enriched with Vitamin B6 & B12, Thiamin, Niacin & Pantothenic Acid.

Bamboo shoot: 
  The health benefit of bamboo shoots including healthy weight loss, balance cholesterol level, and a boosted immune system, it contains protein vitamins & lots of minerals and low in the amount of fat, It has lots of dietary fiber. It is bitter in taste.

Ingrediant:

1. Half kg. Pork meat ( Half fat/Half Meat portion) 
2. 10 bulbs of garlic ( Big size)
3. 3.5 inch Ginger
4. 6 Nos. of Green chili
5. 2 cup bamboo shoot
6. Green coriander
7. 1 tsp. mustard oil
8. salt

Preparation:

1. Take the equal size chopped pork meat 
2.crush garlic & Ginger(make not paste)
3.Heat up the pan, add 1 tsp. mustard oil
4.When oil turns into enough heat add ginger garlic crush.
5.stir it for 3 minutes
6. Now, low the flame, add pork meat and Bamboo shoot stir for   5 minutes, add Green chili
7. Add 6 cup of water
8. Salt to taste & cover with led
9. Cook for 1 hour on low heat until the water got choked. let it be a gravy stage. 
10.After cooking add Green coriander to garnish.
11.This recipe is almost a boil preparation with an ethnic taste.
