    Kulkuls (pronounced as Kalkals) are deep-fried snacks prepared during Christmas in Goan, Mangalorean Catholic and East Indian homes. They also go by the name 'Kidyo' in the Konkan region since their shape represents tiny worms!

INGREDIENTS:

2 cups All Purpose Flour 
½ cup Semolina
2 Egg Whites 
⅓ cup Ghee/Melted Butter
½ cup Powdered Sugar
Salt, to taste 
¼ tsp Baking Powder 
Water, to knead the dough
Vegetable Oil, for frying

METHOD:

1. In a mixing bowl, combine all purpose flour, semolina, egg whites, ghee/melted butter, salt as required and 1 tbsp water. Start mixing them all together to make a dough (keep adding water, 1 tbsp a time).

2. Cover dough with a damp cloth and keep aside for half an hour.

3. Tear a pea-size piece of the dough. Flatten it with a fork or the flat side of a comb and roll it. Set aside and complete the above steps until all the Kulkuls have been formed.

4. Heat oil in a deep stainless steel pot or deep fryer. Fry the kulkuls in a batch of 7 to 10 at a time, depending on the amount of oil.

5. Drain it on a paper towel, serve or store it in an airtight container.
