Lauki Ki Sabji Recipe | Bottle Gourd Curry
Basically a simple and everyday gravy based curry recipe made with diced bottle gourd in an onion and tomato-based sauce. it is an ideal curry recipe which can be served with roti, chapati and rice for lunch and dinner. typically it can be made in both dry and gravy version, but this recipe post belongs to north indian gravy version.
North indian cuisine has myriad gravy or curries to offer which can be served for day to day lunch and dinner. generally, it is made locally available vegetables, paneer and also with a wide range of meat-based options. one such hugely popular yet not considered as a premium curry is lauki ki sabji recipe or also known as bottle gourd curry.
SOME TIPS,SUGGESTIONS VARIATION :
Firstly, the bottle gourd has to be diced in a medium-sized cube. do not attempt to lower the size as it may get dissolved with the sauce while cooking the curry. also, the cubes should not be huge in size as it may not get cooked properly.
Secondly, the same recipe can also be made dry variant without the onion and tomato sauce. i personally like it when topped with fresh coconut or the south indian variant, but it is completely optional. lastly, if you wish to make it more creamy, you can add cashew paste or even cooking cream as a topping once the cooking is finished. this would not only make it creamy but also lowers the spice heat. hence add it in small portions and taste it before adding the next batch of cream.
INGREDIENTS:
- 2 tbsp oil
- 1 bay leaf
- 1 inch cinnamon
- 1 tsp kasuri methi
- 1 tsp cumin / jeera
- 1 onion, finely chopped
- 1 tsp ginger garlic paste
- ½ tsp turmeric
- ¾ tsp kashmiri red chilli powder
- ½ tsp coriander powder
- ¾ tsp salt
- 1½ tomato, chopped
- 450 grams lauki / bottle gourd
- 1 cup water
- ¼ tsp garam masala
- 2 tbsp coriander, finely chopped
INSTRUCTIONS:
1.Firstly, in a large kadai heat 2 tbsp oil and saute 1 bay leaf, 1 inch cinnamon, 1 tsp kasuri methi, 1 tsp cumin until it turns aromatic.
2.Add 1 onion, 1 tsp ginger garlic paste and saute until it turns golden brown.
3.Further, add ½ tsp turmeric, ¾ tsp chilli powder, ½ tsp coriander powder and ¾ tsp salt.
4.Saute on low flame until it turns aromatic.
5.Additionally, add 1½ tomato and saute until it turns soft and mushy.
6.Now add 450 grams lauki and saute for 2 minutes.
also, add 1 cup water and mix well.
7.Cover and boil for 20 minutes on medium flame or until lauki are cooked well.
8.Adjust the consistency as required adding more water if required.
9.Now add ¼ tsp garam masala and 2 tbsp coriander. mix well.
10.Finally, enjoy lauki ki sabji with chapathi or rice.
