     An easy and simple south indian staple food recipe made with boiled rice and a generous amount of lemon flavours. it is one of the frequently made recipes in south india with leftover rice for morning breakfast. yet it can also be served for lunch and dinner with choice of chutney or spicy curries.

   South indian recipes are synonyms to the flavoured and spicy rice options it has to offer. these are typically served for lunch and dinner, which can also be extended as the morning breakfast recipe. one such easy, simple and quick rice recipe is lemon rice recipe or chitranna recipe from karnataka.

   This recipe of lemon rice recipe is typically served for morning breakfast in south india. more importantly, it is made with leftover rice from the previous day of lunch or dinner. basically the leftover rice makes it an ideal ingredient for this recipe. in other words, the rice is dry and moisture free and thus easily mixes with the spices and lemon juice. having said that, the chitranna rice can also be made with freshly cooked rice too. but extra precautions have to be taken to make it moisture free and dry before it is used in the recipe.

TIPS,SUGGESTION AND VARIATION:

  Firstly, i would heavily recommend using short-grain rice like sona masuri or any day to day rice options. particularly avoid basmati rice as it is mainly used for premium rice options. 

  Secondly, the chitrannam recipe has to be served immediately once it is prepared. this is for the fact that it would lose its moisture once it is rested and would turn dry. 

 Lastly, the same recipe can be extended further to be made with finely grated raw mango. it would add more flavour and sourness with lemon juice.

INGREDIENTS:
  • 2 tbsp oil
  • 2 tbsp peanut
  • 2 tbsp cashew
  • 1 tsp mustard
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 1 dried red chilli
  • 1 inch ginger, finely chopped
  • 2 chilli, finely chopped
  • pinch hing / asafoetida
  • few curry leaves
  • ¼ tsp turmeric
  • 2 cup cooked rice
  • ½ tsp salt
  • 2 tbsp coriander, finely chopped
  • 2 tbsp lemon juice

INSTRUCTIONS:

1.Firstly, in a large kadai heat 2 tbsp oil and roast 2 tbsp peanut.
2.Also, roast 2 tbsp cashew until it turns golden brown and crunchy.
3.Keep the fried peanuts and cashews aside.
4.In the same oil add 1 tsp mustard, 1 tsp urad dal, 1 tsp chana dal, 1 dried red chilli.
5.Also add 1 inch ginger, 2 chilli, pinch hing and few curry leaves.
6.Splutter the tempering on medium flame.
7.Add in ¼ tsp turmeric and saute slightly.
8.Further, add 2 cup cooked rice and ½ tsp salt.
9.Mix well making sure everything is well combined.
10.Also, add 2 tbsp coriander and 2 tbsp lemon juice. mix well.
11.Finally, enjoy lemon rice with papad or pack for lunch box.

Notes:

  • Firstly, make sure to use leftover rice for better taste and non-sticky chitranna.
  • Also, adjust the amount of chilli based on your spice level.
  • Additionally, frying peanuts at the first and adding, at last, help to hold the crunchiness.
  • Finally, lemon rice recipe tastes great when prepared slightly tangy.
