                    Mathura Peda Recipe | Mathura Pede 


    Classical indian milk-based sweet dessert made with milk solids and sugar. as the name suggests, the recipe hails from northern indian city of mathura and is generally made during the janmashtami festival. compared to the traditional white peda’s, these contain dark colour as mawa is caramelised.

    Milk-based desserts are very common across india and are made for a different purpose. the most famous one comes from the bengali cuisine, but there are other cuisines which also makes quality milk desserts. one such easy, simple and tasty milk sweet is the mathura peda known for its texture, taste and flavour.

    Peda recipes are common across india and it comes in different shape and texture. but out of all the most distinctive ones are mathura peda and dharwad peda. both come in dark textured colour due to the milk caramelisation. having said that it comes with a price. basically the caramelisation process is a slow and steady process with a continuous stir. this can be a tedious task for a novice or even for the professional. yet the end result is impeccable and the taste of this is unmatchable. 

TIPS,SUGGESTION AND VARIATION:

    Firstly, I always recommend using heavy full cream milk powder for this recipe. full cream milk yields rich milk solids which should be perfect for this recipe. yet you can experiment with skim milk but may take more time and quantity for the same result. 

   Secondly, i have made use of instant khoya/mawa made with milk powder. you can use store-bought mawa or khoya which should also make the same peda. lastly, you can shape these peda’s as you wish and it does not require any particular one.


INGREDIENTS:

FOR INSTANT KHOVA:
  • 1 tsp ghee / clarified butter
  • 1 cup milk
  • 2 cup milk powder


OTHER INGREDIENTS:
  • 1 tsp ghee / clarified butter
  • 6 tbsp milk
  • ½ cup powdered sugar
  • ¼ tsp nutmeg powder
  • ¼ tsp cardamom powder


INSTRUCTIONS:

1.Firstly, in a large kadai heat 1 tsp ghee and add 1 cup milk.
2.Also, add 2 cup milk powder and mix well breaking any lumps.
3.Keeping the flame on low, stir continuously.
4.The mixture starts to thicken.
5.After 10 minutes, the mixture starts to separate from the pan.
6.Keep mixing until it forms a lump. finally, instant mawa is ready.
7.Now add tsp of ghee and break mawa into pieces.
8.Cook until the mawa turns to crumble texture.
9.Once the mixture turns dry, add 2 tbsp milk.
10.Continue to saute on medium flame.
11.After 40 minutes the mixture starts to change colour.
12.Continue to cook until the mixture turns dark golden brown.
cool slightly and blend to a coarse powder.
13.Now add ½ cup powdered sugar, ¼ tsp nutmeg powder and ¼ tsp cardamom powder.
14.Mix well making sure everything is well combined.
15.Furthermore, add 2 tbsp milk and mix well.
16.Form a moist mixture adding milk as required.
17.Take a ball sized peda mixture and share well.
18.Roll into sugar coating all sides.
19.Finally, enjoy mathura peda or refrigerate and serve up to a week.
