Mushroom Pepper Fry Recipe | Pepper Mushroom 




     An easy and flavoured south indian starter or side dish recipe made with sliced mushroom and pepper powder. typically in south india, this dish is made as a side to sambar rice or rasam rice combination, but can also be served as a starter. moreover, it is generally made as a dry dish, but can also be served with a sauce, if it is prepared as a main.

   Pepper-based recipes are very common across south indian states and are made with different hero ingredients. generally, the pepper as a spice is used for the flavour, to improve the spice level and eventually the taste of end product. one such simple and easy dish recipe made with a generous amount of pepper is mushroom pepper fry recipe, known for its flavour.

TIPS,SUGGESTION AND VARIATION:

 Firstly, I  would heavily recommend using button mushroom for this recipe. it would easily slice and at the same time do not crumble or meltdown when cooked. moreover, i would recommend getting bigger size mushrooms for this recipe. 

 Secondly, the pepper has to be added generously to this recipe, as it is the main source of taste and flavour. however, if you are serving it to kids, you need to extra careful as the spice level can be too much to handle for them. lastly, the mushroom would start releasing its water once it is rested. hence you may drain the excess water before reheating it in the microwave or in a pan.

INGREDIENTS:

FOR MASALA POWDER:
1 tbsp pepper
½ tsp fennel / saunf
½ tsp cumin / jeera
½ tsp coriander seeds

OTHER INGREDIENTS:
2 tbsp ghee / clarified butter
1 tsp mustard
2 dried red chilli
few curry leaves
1 inch ginger, finely chopped
½ onion, sliced
300 grams mushroom, sliced
½ capsicum, sliced
½ tsp salt

INSTRUCTIONS:

1.Firstly, in a small mixi jar take 1 tbsp pepper, ½ tsp fennel, ½ tsp cumin and ½ tsp coriander seeds.

2.Blend to coarse powder without adding any water. keep aside
now in a large kadai heat 2 tbsp ghee and splutter 1 tsp mustard, 2 dried red chilli and few curry leaves.

3.Also, add 1 inch ginger and ½ onion.saute until onions shrink slightly.

4.Further, add 300 grams mushroom and stir fry on high flame.

5.Saute until onions shrink slightly and moisture is released.

6.Further, add ½ capsicum and stir fry for 2 minutes.

7.Now add the prepared pepper masala powder and ½ tsp salt.

8.Mix well making sure all the spices are well coated.

9.Finally, enjoy mushroom pepper fry with phulka or rice.
