Paneer Frankie Recipe
An easy and simple snack recipe made with leftover roti or chapathi and paneer stuffing. it is generally made and served as a street food snack, but can be easily served for lunch and dinner too. it is quite popular with all the age groups, but is hugely popular with the kids and can be ideal tiffin box snack recipe.
Kathi roll or frankie recipes are popular street food snack across india. it is made generally with a combination of egg yolk with spiced meat stuffing, wrapped in wrap bread. but for the non-meat eaters, vegetarian rolls are made and paneer frankie recipe is one such popular alternatives among the veg frankie recipes.
Kathi roll or frankie recipes have always been a quick and easy street food recipe across india. it is known for its taste, flavour and more importantly its filling characteristics. having said that, it was predominantly a meat based recipe was stuffed with chicken, lamb or mutton based semi dry gravy. gradually the trend is changing and you can find many vegetarian alternatives too made with a combination of veggies, soya and other proteins. paneer frankie recipe or paneer kathi roll is one such hugely popular alternative amongst the younger generation which is made similar to meat-based frankie, yet has to offer a bouquet of flavour.
TIPS,SUGGESTION AND VVARIATION:
Firstly, as i mentioned earlier you can make the same stuffing with any other vegetarian or meat alternative. just replace it with paneer and your frankie should equally taste good.
Secondly, if you are making these for tiffin or lunch box, ensure to wrap it tightly so that it does not turn soggy and lose its shape. as a matter of fact, it would be much easier and cleaner with store-bought wrap roll. lastly, with the stuffing, i have added cheese on top of the paneer. however you can skip if you are diet conscious.
INGREDIENTS:
FOR PANEER STUFFING:
- 1 tbsp butter
- 1 cup paneer / cottage cheese, cube
- 2 tsp oil
- 1 onion, finely chopped
- 1 tsp ginger garlic paste
- ¼ tsp turmeric
- ½ tsp kashmiri red chilli powder
- ½ tsp coriander powder
- ¼ tsp cumin powder
- ½ tsp garam masala
- 1 cup tomato pulp
- 2 tbsp water
- ½ tsp salt
- ½ capsicum, sliced
- 2 tbsp coriander, finely chopped
FRANKIE MASALA:
- ½ tsp kashmiri red chilli powder
- ¼ tsp turmeric
- ½ tsp cumin powder
- ½ tsp coriander powder
- ½ tsp garam masala
- ½ tsp chaat masala
- ½ tsp amchur
- ¼ tsp salt
OTHER INGREDIENTS:
- 2 wrap
- 2 tbsp mayonnaise, eggless
- 2 tsp chilli sauce
- 2 tbsp cabbage, shredded
- 2 tbsp carrot, grated
- few onion, sliced
- 2 tsp lemon juice
- 4 tbsp cheddar cheese, grated
INSTRUCTIONS:
FRANKIE STUFFING PREPARATION:
1.Firstly, in a kadai heat 1 tbsp butter and roast 1 cup cubed paneer.
2.Roast until paneer turns golden brown. keep aside.
3.Now add 2 tsp oil and saute 1 onion, 1 tsp ginger garlic paste.
4.Saute until onions turn olden brown.
5.Further, add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder, ¼ tsp cumin powder and ½ tsp garam masala.
6.Saute on low flame until spices turn aromatic.
7.Now add 1 cup tomato pulp and saute well. to prepare tomato pulp, blend 3 ripened tomato to a smooth paste.
8.Saute until the oil separates from tomato paste.
9.Further, add 2 tbsp water, ½ tsp salt and mix well.
10.Add in roasted paneer, ½ capsicum and mix well.
11.Cover and simmer for 4 minutes.
12.Now add 2 tbsp coriander and mix well. paneer stuffing ready.
FRANKIE MASALA PREPARATION:
1.Firstly, in a small bowl take ½ tsp chilli powder, ¼ tsp turmeric, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, ½ tsp chaat masala, ½ tsp amchur and ¼ tsp salt.
2.Mix well and spice mix is ready.
PANEER KATHI ROLL PREPARTRION:
1.Firstly, take wrap or chapati and warp if required.
2.Add 1 tbsp eggless mayonnaise and 1 tsp chilli sauce. mix and spread uniformly.
3.Now add in 2 tbsp prepared paneer stuffing and spread slightly.
4.Top with 1 tbsp cabbage, 1 tbsp carrot and few onions.
5.Sprinkle in prepared frankie masala and squeeze 1 tsp lemon juice.
6.Also, grate 2 tbsp cheddar cheese uniformly.
7.Now roll tight without allowing the stuffing to come out.
tuck the ends make it well secured.
8.Finally, cut into halves and enjoy paneer frankie.
