Steamed Lentil Dumplings | Dal dumplings | Nucchina Unde
A Healthy and filling dumplings recipe made with soaked and grounded toor dal, chana dal, dill leaves and spices. it is traditionally made and served for morning breakfast due to that fact that is made with lentil which is filled essential protein for the morning meal. the recipe generally served with spicy coconut chutney or majjige huli, but can also be served as it is.
karnataka cuisine is known for its healthy, less oil and steamed savory breakfast recipes it has to offer. these are typically filled with carbohydrates as it is generally made with rice and lentil. but there are some steamed dumplings which are purely lentil-based and nuchinunde recipe or steamed lentil dumplings is one such recipe.
In kannada unde means ladoo which is generally associated with sweet or dessert recipes. hence many who are not familiar with this recipe may get confused with the name. however, it is savoury breakfast recipe made with lentils, herbs and spices. unlike other steamed breakfast recipes from the karnataka cuisine which are loaded with carbs in it, this recipe is fully packed with protein. and thus making it a super healthy breakfast recipe. some even prefer to serve it with dosa and idli to make it a balanced meal. however, it is not mandatory and these steamed lentil dumplings are itself a complete meal.
Tips, Suggestions and Variations:
Firstly, i have used the mixture of toor dal and chana dal which should be sufficient for this recipe. yet you can experiment this recipe with other lentils too. for instance, you can use moong dal and masoor dal too in equal quantity.
Secondly, for a complete recipe, you need to have dill leaves and coriander leaves to the lentil dough. you may also add fresh pudina leaves to make it even more flavourful. lastly, you may feel it dry when it is served without any sides. if so add some ghee as topping to make it greasy and lite.
INGREDIENTS:
½ cup toor dal
½ cup chana dal
water, for soaking
½ cup coconut, grated
3 tbsp dill leaves, finely chopped
2 tbsp coriander, finely chopped
few curry leaves, chopped
1 inch ginger, finely chopped
2 chilli, finely chopped
1 tsp cumin / jeera
pinch hing / asafoetida
¾ tsp salt
INSTRUCTIONS:
1.Firstly, in a bowl take ½ cup toor dal and ½ cup chana dal.
2.Add enough water and soak for 3 hours.
3.Drain off the dal and transfer to the mixi. blend to a coarse paste without adding any water.
4.Now take the coarse paste of dal into large bowl.
5.Add ½ cup coconut, 3 tbsp dill leaves, 2 tbsp coriander and few curry leaves.
6.Also add 1 inch ginger, 2 chilli, 1 tsp cumin, pinch hing and ¾ tsp salt.
7.Squeeze and mix well until all the spices are combined well.
8.Grease the hand with oil and form a cylindrical shape.
9.Place in the steamer leaving enough space in between.
10.Steam for 15 to 20 minutes or until the dumpling is cooked completely.
11.Finally, enjoy nuchinunde with ghee, chutney or majjige huli.
