Sweet Sour Tomato
The tomato is the spaces of the berry plant and family of the nightshade plant like chili, Brinjal. it can be found in the whole world. Technically it as a Fruit, but tomato is generally categorized as the vegetable. Tomatoes enrich with the antioxidants lycopene, which have many health benefits, including reduced risk of heart disease and
Tomato is the great source of vitamin C, potassium, and vitamin K. tomato are usually red when ripe, but it has the vivid variety of colors like yellow, orange, green and purple. there are many subspecies of tomatoes available in the world with different shapes and flavor.
Ingrediant:
1.6 ripe tomatoes, sliced
2.1 and 1/2 tsp mustard oil
3.1 small onion, finely chopped
4.1 tsp a spice mix of equal amounts of fenugreek seeds(methi), fennel seeds (saunf) and black cumin seeds (kala jeera)
5.1 bay leaf
6. 2 whole red dried chili
7.2 tsp turmeric powder
8. 1 cup Sugar
9. Salt to taste
Preparation:
1. Heat the oil in a pan.
2. Add the spice & whole red chili and bay leaf.
3. When the seeds start to pop, add the onion and tomatoes. Season with salt and add the turmeric.
4. Mix well, cover and cook (stir often) till the tomatoes turn mushy.
5. Add the Sugar and stir until it is dissolved and the tok thickens… just so that it is neither too watery or too thick.
6. Give a nice stir and remove from heat.
7. Serve with rice, khisiris or even with rotis and other flatbreads.
