Sweet Wheels with Jaggery Glaze| How to make Sweet Wheels

Sweet Wheels | Baked Ginger flavoured Oats with Jaggery Glaze 


Ingredients :
  • 1 Cup Oat Flour
  • 1/3 Cup Jaggery
  • 1/4 teaspoon Ginger powder
  • 1 teaspoon Vanilla essence (optional)
  • 1/4 Chopped Nuts/ Chopped Coconut/ Soaked Boiled Legumes( I used Black eyed peas)
  • 1 Cup water( Adjust)
  • 2 teaspoons Olive Oil

For the glaze:
  • 1/2 Cup Jaggery
  • 1/2 Cup Water
  • Crushed Cornflakes, Grated Nuts, Grated Fresh Coconut ( You can customise according to taste)


METHOD :

1. Dry roast oats in a pan till the raw smell goes. Do not brown the oats.  Powder the oats. Your Oat Flour is ready. Prepare  this in advance.

TIP: You can make a larger batch and store it in an airtight container.

2. I wanted to add legumes instead of dry fruits and nuts, so used 1/4 Cup Black eyed peas and Chopped fresh coconut.

TIP: You can use blanched almonds, pistachios for the crunch.

3. Melt Jaggery in a cup of water, filter and heat it in a heavy bottom pan over medium heat. Add the ginger powder.

4. When the jaggery starts to boil, add the legumes or dryfruits, which ever you are using.

5. Keep stirring for a minute. Add a teaspoon of Olive oil.

6. Now add the Oat Flour and stir continously to mix. The mixture will thicken and you will get a stiff dough.

TIP: If you see some unmixed oat flour, add little water and keep mixing to bind the mixture. This will take less than 2 minutes.

7. Transfer the dough to a bowl.  After 2-3 minutes, when the mixture is warm to touch, grease your hands with olive oil and Knead the mixture to make a smooth dough. 

8. Grease the doughnut moulds with oil.

9. Take equal portions of the dough and shape them in the mould. Preheat the Oven at 180 degrees C for 10 minutes. Bake the donuts at 160 degrees C for 5 to 7 minutes. 

10. To prepare the glaze, heat the jaggery sugar mixture and the jaggery need to come to become thick. To check the right consistency for glaze, test by just dropping the jaggery sauce( one drop). If it does'nt mix with water, your glaze is ready.

11. Now, remove the donut from the mould. Dip it inside the jaggery syrup to coat the top layer. Arrange them in a plate. Add your choice of garnish. You can even add colourful sprinkles or chocolate sauce if you want to customise for children ( They will love you for this! )

Healthy, tasty and great looking 'Sweet Wheels' are ready to be served ! They taste great when served hot or warm.
