INGREDIENTS:
  • 4 medium Potatoes
  • 6 long Brinjals (Green | Purple)
  • ½ cup Chana Dal
  • 2 Green chilies, cut into half
  • 1 big Onion, finely sliced
  • ½ tbsp. Ginger-Garlic paste
  • ½ tbsp. Garam Masala
  • 2 tbsp. dry Coconut powder
  • 1 tbsp. Red chili powder
  • ½ tbsp. Turmeric powder
  • ½ tbsp. roasted Coriander powder
  • Salt, as per taste
  • 2 tbsp. Oil
  • 2 tbsp. minced Coriander leaves

PREPARATION:
  1. First, thoroughly wash and soak chana dal in enough water for 20 minutes.
  2. Drain the water and add it to pressure cooker along with 2 cups of water. Pressure cook for 3 whistles. (Dal should turn soft, not mushy)
  3. Wait till pressure settles and remove the lid. Drain excess water and set aside. (I use the same water for cooking vegetables)
  4. Till the time dal cooks, peel the potatoes, wash thoroughly and cut into cubes. Soak the cubes in water till use.
  5. Thoroughly wash brinjals and cut them into 2-inch pieces. Soak them in water till use.

  7. How to make Aloo Baingan Chana Dal
  8. Heat oil in a pan and fry sliced onions. When onions start to turn translucent, add ginger-garlic paste and fry till raw smell wafts.
  9. Now add cubed potatoes, cut brinjal pieces and green chilies. Fry on medium flame for 2 minutes.
  10. Add red chili powder, turmeric powder, salt, dry coconut powder and roasted coriander powder.
  11. Fry for another 2 minutes by gently stirring the vegetables. Add 1½ cups of water. Stir and cover with a lid. Cook on low flame till potatoes turn soft.
  12. Now add cooked chana dal and garam masala. Stir and cook for another 5 minutes.
  13. Finally, check for salt, add minced coriander leaves and turn off the flame. Serve warm with rice and chaar or rasam.
