Bhoplyache Bharit / Maharashtrian Red Pumpkin Recipe


     Bhoplyache Bharit is a typical Maharashtrian recipe made with red pumpkin and yogurt. It is a staple in most Maharashtrian homes and generally features as a refreshing accompaniment in a meal. INGREDIENTS:
100 gms Red Pumpkin
1 cup Curd
1-2 Green Chillies, finely chopped
Salt, as per taste
Sugar (optional)
1 tsp Cumin Seeds
1-2 tsp Ghee (Clarified Butter)
Coriander Leaves, for garnishing

METHOD:
1. Boil the red pumpkin but don’t let it overcook.
2. Bring the red pumpkin to room temperature. Add the curd, salt as per taste and sugar (optional). If you find the mixture thick, add some milk to make it more curry-like.
3. For the tempering, switch on the gas, place a small pan and add ghee. Once it becomes hot, add the cumin seeds and finely chopped green chillies and let it splutter.  
4. Switch off the gas and add the tempering to the red pumpkin.
5. Garnish with coriander leaves. Enjoy Bhoplyache Bharit!
