Curried Tofu Kebab Recipe


      Curried Tofu Kebabs served along with white rice makes a delicious dinner under an hour or even a party snack. They also make great appetizers for parties, when served along with a yogurt or cheese dip.

      First, let me explain that much of the time involved in this dish is marination, so while that's happening, you can be doing other things. You might even want to prepare the marinade and vegetables the night before and let flavour develop overnight in the fridge.

Ingredients:
Ingredients for the Marination of the Kebab:
  • 1 inch Ginger,grated
  • 4 cloves Garlic,minced
  • 4 tablespoons Lemon juice
  • 4 tablespoons Soy sauce
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 2 teaspoons Chinese 5 Spice Powder, (or curry powder)
  • 1/4 teaspoon Red Chilli flakes
  • Salt, to taste

Ingredients for the Vegetable Kebab:
  • 250 grams Tofu,cut into cubes
  • 2 Red Yellow or Green Bell Pepper (Capsicum),cubed
  • 2 Green zucchini,thickly sliced
  • 2 Onions,diced into squares

Preparation:
  1. To begin making the Curried Tofu Kebabs; soak at least 8 wooden skewers in water.
  2. Mix together the ginger, garlic, lime juice, soya sauce, turmeric, curry powder and chilli pepper flakes in a large bowl.
  3. Add the tofu and vegetables into the marinade and stir well to combine. Cover the bowl and marinate the vegetables for an hour or more. 
  4. Because the marinade will stain your fingers, wear rubber gloves to thread the tofu and vegetables onto the skewers.
  5. Get ready to grill only when you are ready to serve the Kebabs. I like to use a stove top grill for grilling, but you can also use a BBQ grill if you have. You can also use the broil function in the oven to grill these kebabs
  6. Skew the vegetables onto the skewers (as in the picture) and keep aside.
  7. Grease and preheat the grill pan with oil; place the vegetable skewers on the grill and grill until the vegetables are cooked and lightly browned. 
  8. Serve with warm brown rice or just as a party snack along with your favorite Herbed Baby Potatoes Recipe.
