Kashmiri Mutton Ribs / Kabargah Recipe


                  Kabargah is a traditional Kashmiri Pandit preparation of mutton ribs, cooked in milk and spices. Kashmiri cuisine is fairly elaborate, each dish being given its due, laboriously cooked with precision and technique. Kabargah is one such dish, generally had as an appetizer, succulent and tender on the inside and crisp on the outside, it is an art to cook the meat just right and it is a feast for the senses!

                  The uniqueness of the Kashmiri Pandit cuisine lies in the generous use of turmeric, yoghurt, spices and a dollop of pure magic :)

INGREDIENTS:
  • 1 kg Mutton Ribs (Seena) 
  • 300 ml Milk (with cream)
  • 4 nos Cloves
  • 2-3 nos Bay Leaves
  • 1 inch Cinnamon, coarsely crushed
  • 6-7 nos green cardamom
  • 6 nos Big Black Cardamom (Badi Elaichi), coarsely crushed
  • 2 tsp Dried Ginger Powder (Sonth)
  • 4 tsp Aniseed Powder (saunf powder)
  • Salt to taste
  • Ghee (Clarified butter) or Mustard Oil for deep frying
  • Silver Varakh (edible silver sheets)

MARINADE: 
  • 500 gms Curd (Yoghurt) 
  • Salt to taste (if required)
  • 1/2 tsp Cinnamon Powder
  • 1 tsp Big Black Cardamom Powder
  • 1/2 tsp Green Cardamom Powder
  • 1/2 tsp Dried Ginger Powder (sonth)
  • 3-4 tsp Aniseed Powder (saunf powder)

METHOD:
1. In a pressure cooker, add mutton ribs with milk, cloves, bay leaf, cinnamon, green and black cardamom, ginger powder (sonth), aniseed powder.
2. Switch off the gas after two whistles of the cooker. On opening the lid, if any liquid remains, then put it back on fire and ensure that it is completely dried.
4. Once the mutton has cooled down, add the marinade to the mutton ribs, mix well and leave it for minimum 4-5 hours, preferably overnight. 
5. Once the ghee or mustard oil is really hot, deep fry the meat pieces. It should be deep brown in colour.
6. Now wrap the mutton pieces in silver varakh, arrange it on a plate and serve hot!
