Kolhapuri Kheema Recipe
Kolhapuri cuisine is the local food of Kolhapur city in Maharashtra. Contrary to popular belief, the cuisine is not entirely spicy. There are a variety of dishes that balance out the spice level and create an irresistible combination of flavours. It is widely available in restaurants but none can match to the experience of savouring it all at home. When in Pune, you can enjoy an authentic Kolhapuri meal at the home of a local.
INGREDIENTS:
- 1 kg Kheema (Chicken/Mutton)
- 1 big Onion, finely chopped
- 1 Tomato, finely chopped
- 4 tbsp Onion-Coconut Paste
- 2 tbsp Ginger Garlic Paste
- 1/2 tbsp Red Chilli Powder
- 4 tbsp Oil
- Water,as required
- Salt,as required
- Boiled Egg Whites, finely chopped or grated
- Coriander,finely chopped
METHOD:
1. Heat oil in a pan. Add in the finely chopped onions and saute until it becomes pinkish in colour.
2. Add finely chopped tomatoes and mix well.
3. Add the onion-coconut paste and roast it till the oil separates.
4. Mix in the ginger-garlic paste, red chilli powder and salt as per taste.
5. Add kheema and stir well. Pour room temperature water and stir a few times. Cover the pan and let the kheema cook on a low flame for a few minutes.
6. Garnish the dish with finely chopped/grated boiled egg whites and finely chopped coriander. Serve hot.
