Saoji Khas Khas Recipe


           Saoji (or Savji) cuisine is the local food of Nagpur. It is known for its spicy palate and the dishes are easily available in family-style restaurants called 'khanavals'. The cuisine is largely a non-vegetarian fare but there are certain vegetarian dishes that simple to make and impossible to resist. 

INGREDIENTS:
  • 1 cup Khas Khas (Poppy Seeds)
  • 5-6 medium Onions, finely chopped
  • 3 tsp Red Chilli Powder
  • 2 tsp Turmeric Powder
  • 1 tsp Saoji Garam Masala
  • Salt, as required
  • Water, as required
  • Oil, as required
  • Coriander Leaves, for garnishing

METHOD:
1. Soak khas khas (poppy seeds) in water for 2-3 hours. Remove and grind into a paste.
2. Heat oil in a pan. Add in the finely chopped onions and saute till brown. 
3. Add the khas khas paste, red chilli powder, turmeric powder and salt and mix. Cover the pan and cook on low flame for 5-10 minutes.
4. Add ½ cup water and stir for 2 minutes. Add the Saoji garam masala and mix well.
5. Garnish with coriander leaves and serve hot.
